Mama's Jerk Chicken (6 People) What You'll Need:   *Mama's Jerk Sauce *6 chicken leg quarter *BBQ grill/Oven   Steps -Marinate the chicken using Mama's Jerk Sauce for 4 - 24 hours -Place marinated chicken leg qaurters on BBQ grill/Oven -Cook Chicken for 45 minutes on medium heat -Glaze chicken with Mama's Jerk Sauce then cook for a further 5 minutes. -Enjoy your Jerk Chicken :)

Mama's Jerk Chicken

(6 People)

What You'll Need:

 

*Mama's Jerk Sauce

*6 chicken leg quarter

*BBQ grill/Oven

 

Steps

-Marinate the chicken using Mama's Jerk Sauce for 4 - 24 hours

-Place marinated chicken leg qaurters on BBQ grill/Oven

-Cook Chicken for 45 minutes on medium heat

-Glaze chicken with Mama's Jerk Sauce then cook for a further 5 minutes.

-Enjoy your Jerk Chicken :)

 
 
 

 
Mama's BBQ Sweet Sticky Chicken (Serves 6) Mama's Green Marinade & Cook'in Sauce  *6 chicken leg quarter *BBQ grill/Oven *BBQ sauce of your choice *Honey   Instructions: -Marinate the chicken using Mama's Green Marinade & Cook'in Sauce  4 - 24 hours -Place a suitable amount of BBQ sauce and honey into bowl -Stir the mixture -Place marinated chicken leg qaurters on BBQ grill/Oven -Cook Chicken for 45 minutes on medium heat -Glaze chicken with Mama's BBQ sauce mixture, then cook for a further 5 minutes. -Enjoy your Jerk Chicken :)

Mama's BBQ Sweet Sticky Chicken (Serves 6)

Mama's Green Marinade & Cook'in Sauce 

*6 chicken leg quarter

*BBQ grill/Oven

*BBQ sauce of your choice

*Honey

 

Instructions:

-Marinate the chicken using Mama's Green Marinade & Cook'in Sauce  4 - 24 hours

-Place a suitable amount of BBQ sauce and honey into bowl

-Stir the mixture

-Place marinated chicken leg qaurters on BBQ grill/Oven

-Cook Chicken for 45 minutes on medium heat

-Glaze chicken with Mama's BBQ sauce mixture, then cook for a further 5 minutes.

Mama's Jerk Chicken Salad  (4 People) What You'll Need:   *Mama's Jerk Sauce *1.5 kg boneless chicken thighs *BBQ grill/Oven *Mixed Salad *1Mango *1 red peppers *1/2 cucumber *1 carrot *salad dressing of your choice   Steps:   Chicken : -Marinate the chicken using Mama's Jerk Sauce for 4 - 24 hours -Place marinated chicken leg qaurters on BBQ grill/Oven -Cook Chicken for 10 minutes on medium-high heat -Glaze chicken with Mama's Jerk Sauce then cook for a further 5 minutes.   Salad: -Rinse mixed vegetables in strainer. -Dice cucumber, tomato, red peppers. -Peel and slice your 1 Mango. -Place all vegetables and fruit in a big bowl and mix thoroughly. -Place salad on plate. -Place chicken on top of you salad salad and drizzle you choice of salad dressing. -Personally we prefer "Thousand Island Salad Dressing".

*1/2 cucumber

Chicken :

-Marinate the chicken using Mama's Jerk Sauce for 4 - 24 hours

-Place marinated chicken leg qaurters on BBQ grill/Oven

-Cook Chicken for 10 minutes on medium-high heat

-Glaze chicken with Mama's Jerk Sauce then cook for a further 5 minutes.

 

Salad:

-Rinse mixed vegetables in strainer.

-Dice cucumber, tomato, red peppers.

-Peel and slice your 1 Mango.

-Place all vegetables and fruit in a big bowl and mix thoroughly.

-Place salad on plate.

-Place chicken on top of you salad salad and drizzle you choice of salad dressing.

-Personally we prefer "Thousand Island Salad Dressing".

 

Fish


Prawn Skewers (Serves 4)   1 kg of prawns 2 Pineapples 3 green peppers 3 red onions 2 Limes 4 Tablespoons of Mama Jacqs Marinade   1/ Marinade the prawns in Mama Jacqs sauce 2/ Peel & cut the pineapples in small squares 3/ Marinade the pineapples in red chilli powder with the juice of 2 limes  4/ Leave the pineapples and the prawns to marinade  for minimum 1 hour 5/Once the prawns & the pineapples have marinated long enough, cut the onions & peppers 6/ Start assembling the skewers  7/Cook on a grill or BBQ until the prawns are cooked and the pineapple caramelised 8/Serve

Prawn Skewers (Serves 4)

 

1 kg of prawns

2 Pineapples

3 green peppers

3 red onions

2 Limes

4 Tablespoons of Mama Jacqs Marinade

 

1/ Marinade the prawns in Mama Jacqs sauce

2/ Peel & cut the pineapples in small squares

3/ Marinade the pineapples in red chilli powder with the juice of 2 limes 

4/ Leave the pineapples and the prawns to marinade  for minimum 1 hour

5/Once the prawns & the pineapples have marinated long enough, cut the onions & peppers

6/ Start assembling the skewers 

7/Cook on a grill or BBQ until the prawns are cooked and the pineapple caramelised

1 Pot Of Plain Yoghurt

1/Cut The Tofu Into 4 Cms Squares And Marinade In 4 Tablespoons Of Mama Jacqs For 1 Hour Minimum

2/Pre-Heat The Oven To 180C

3/Bake For Approx 15 Mins

4/While The Tofu Is Cooking, Start Thinly Slicing The Cucumbers, Radishes & Onion

5/Pour Some Of The Yoghurt Into A Bowl And Add The Dill

6/Spread Some Of The Yoghurt Mix On The Wraps

7/ Add The Cucumber, Radishes & Onions

8/ By Now The Tofu Should Be Ready, Add It To The Wraps

9/ Sprinkle Some Feta

10/Serve

 

Sweet Potatoes Fries

 

2 Kgs Of Sweet Potatoes

2 Teaspoons Of Smoked Paprika

2 Teaspoons Of Chilli Powder

2 Teaspoons Of Garlic Salt

2 Teaspoons Of Italian Herbs Mix

 

1/Pre-Heat The Oven To 200C

2/Sprinkle The Spices Evenly And Mix

3/Bake For 20 To 25 Mins
